No-Bake Energy Bites
This gluten-free bite-sized ball of goodness has become our go-to for when we want something sweet, want convenient food that travels well, and frozen, it’s a whole other kind of yum. They’re best stored in the refrigerator, or, we’ll make a BIG batch of them and freeze them and take out a few at a time. Or just pop ’em frozen right into our faces. Perfect road-trip food, off-grid food, busy family food, or every day healthy living food. It’s like a cookie and granola bar got together and make something even better. AND healtheir! I’ve been experimenting with various quantities of each of the ingredients, a little more or a little less, and this is our perfect blend. I encourage you to experiment with this one – add chopped bits of dried fruits like apricot or cranberry.
They are satisfying beyond imagination. If we’re going to be out all day, taking photos or creating something or driving a distance, a few of these will definitely be in our picnic bag. I had no idea something SO GOOD could be so easy to make, and so much fun to develop. No chemicals, nothing artificial, no preservatives, no gums, no crap.
Ingredients
1 cup rolled oats (we get gluten-free oats)
1/3 cup ground flax seed
1/2 cup raw peanut butter (if allergic to peanuts, use almond butter)
1/3 cup raw honey (use agave if vegan)
1/2 c shredded unsweetened coconut flakes
1/2 c hemp hearts
1-2 teaspoon vanilla
1/2 teaspoon cinnamon
Optional: 1/2 cup mini semi-sweet chocolate chips or chopped up vegan carob chips
Mix everything together in a bowl and stick in the fridge for a few hours until it absorbs together – it’s MUCH easier to handle when it’s all absorbed rather than just mixed. When forming the balls, I will get a few drops of water on my hands after every few balls and that helps the mix stick to itself and not my hands. Once they’re all rolled into balls, put them into a sealed container in the fridge or freezer.
Full of fiber, protein, omega-3’s, antibacterial and antiviral cinnamon and honey, and hemp hearts – the most complete protein of all plant-based proteins. And lastly, I strongly suggest you don’t eat more than a couple of these in a day – they are very full of fiber and will likely keep you regular as can be.
